
Tornado Omelet Rice with Meat Sauce 肉醬旋風蛋包飯
Ingredients
- 2 cups Cooked rice
- 300 g Ground beef
- 156 ml Tomato paste (one small can)
- 1 Medium onion (diced)
- 1 cup Cherry tomatoes (cut into halves)
- 4 Eggs
- 1 tsp Light soy sauce
- 1 tsp Sugar (for marinade)
- 1 tsp Corn starch
- 1 tsp Oil (for marinade)
- 200 ml Water
- 2 tsp Sugar ( for sauce)
- ½ tsp Salt (for sauce)
- 1 tbsp Oil (for frying ground beef)
- 1 tbsp Oil (for frying eggs)
- 1 tsp Chopped parsley
Steps
Cook rice Rice should be hot when ready to plate
Marinate ground beef with 1 tsp light soy sauce, 1 tsp sugar and 1 tsp corn starch. Mix well and add 1 tsp oil. Mix well again and set aside
Dice onion and set aside
Cut tomatoes and set aside
Chop the parsley and set aside
Turn heat to medium-high. Add 1 tbsp of oil and brown the ground beef. Cook for about 2 minutes or until the beef is approximately 50% cooked and remove the beef. Leave the oil in the pan
Using the same pan, put in the diced onions. Stir-fry until it’s aromatic
Add the tomato paste. Cook it together for 1 minute and add 2 tsp sugar and ½ tsp salt. Mix well
Add 200ml of water to the sauce and bring the sauce to a boil
Reduce the heat to low. Add the ground beef and cherry tomatoes. Let it simmer for 15 minutes
To thicken the meat sauce, combine 1 tsp of corn starch with 2 tbsp water. Mix well and pour into the sauce and mix well again the thickness of the meat sauce depends on the water content of the tomatoes. If you think the sauce is thick enough, then you can skip this step
Turn off heat and set aside
Pack a bowl with 1 cup of cooked rice. Place the bowl upside down on a plate and then remove the bowl. Repeat for the second serving. Make the tornado egg
Crack and beat 2 eggs
In a non-stick pan, add 1 tbsp oil, pour the beaten eggs and when the egg is starting to cook, swirl the egg around to form a large circle
Use a pair of chopsticks and gather 2 opposite sides of the egg together with the chopsticks ending up being 1” apart. It will have the shape of a bow-tie
Do not remove the chopsticks from the egg and gently spin the chopsticks so that egg is also spinning to make it into a circle shape. Use the edge of the pan to help shape the egg
Once the egg is cooked, slide it onto the rice
Spoon the meat sauce around the rice and egg If the egg doesn’t look nice, then put some meat sauce on top of the egg to replicate an erupting volcano
Repeat for the second serving
Add chopped parsley and serve
