Steamed Fish with Ginger & Scallion
Ingredients
- 1.5 lb tilapia
- 1 oz ginger
- 5 stalk green onion
- 5 piece cilantro
- 2 tbsp oil
- 2 tbsp light soy sauce
- 0.5 tsp dark soy sauce
- 0.5 tbsp cooking wine
- 0.25 tsp white pepper
- 1 tbsp water
- 0.5 tsp sugar
- 0.5 tsp salt
- 1 tbsp sesame oil
Steps
First, prepare the tilapia (ours was already gutted and de-scaled when we bought it; if yours wasn't, make sure to do that!):
We'll be cutting ginger into two different shapes to use in two different places.
In a small bow, mix together light soy sauce, dark soy sauce, cooking wine, white pepper, water, sugar, and salt.
Get your steaming set-up ready; ours is a steamer rack in a wok. Boil water in (or add boiling water to) the wok, enough water to nearly reach where the dish will sit, although it doesn't need to touch the dish.
Heat oil on high heat for about 1 minute, or until shimmering. Then, carefully pour the oil over the fish. Enjoy the sizzle! You can aim for the ginger and green onions to help them bloom; they'll be super aromatic.
