# Vegetarian Hot Pot

## Ingredients

- 2 oz ginger
- 4 oz onion
- 6 oz carrot
- 14 oz daikon
- 1 tablespoon oil
- 1 tablespoon cooking wine
- 10 cup boiling water
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon chili sauce
- 6 oz napa cabbage
- 8 oz lotus root
- 6 oz bok choy
- 6 oz seafood mushroom
- 8 oz fresh shiitake mushroom
- 1 lb soft tofu
- 6 oz vermicelli
- 4 oz beansprout
- 6 oz fried tofu puff
- 4 oz spinach
- 8 oz fresh rice noodle
- 3 tablespoon vegetarian oyster sauce
- 3 tablespoon light soy sauce
- 1 tablespoon rice vinegar
- 2 tablespoon sugar
- 1 teaspoon chili sauce
- 2 tablespoon boiling water

## Steps

1. Clean the  ginger and cut into thin slices.
2. Trim the stem horizontally off the napa cabbage and slice it into smaller pieces. Next, cut the leafy parts lengthwise into long narrow pieces.
3. In a small bowl, combine the vegetarian oyster sauce, light soy sauce, rice vinegar, sugar, and chili sauce. Add the boiled water. Stir until well combined.
4. Heat a wok on high heat. Add the oil, followed by the ginger and stir fry for about 1 minute.
5. Transfer the soup base  to a hot pot with divider.  Season each side with half of the salt and sugar. Top the pot off with more hot water if needed. Mix in the seasonings and cover to simmer for another 5 minutes.
