
Rainbow Chicken Stir Fry
Ingredients
- 10 oz chicken breast
- 0.5 red bell pepper
- 0.5 green bell pepper
- 0.5 carrot
- 0.5 onion
- 2 celery stalk
- 10 baby corn
- 1 tsp ginger
- 1 tsp garlic
- 0.5 tsp salt
- 0.5 tsp sugar
- 1 tsp light soy sauce
- 1 tsp oyster sauce
- 1 tsp cooking wine
- 0.5 tbsp chicken powder
- 1 tsp cornstarch
- 2 tbsp water
- 1 tbsp cooking wine
- 0.5 tsp sugar
- 0.5 tsp salt
- 1 tbsp oyster sauce
- 2 tbsp water
- 0.5 tbsp cornstarch
- 3 tbsp water
- 3 tbsp oil, for cooking chicken
- 1.5 tbsp oil, for cooking vegetables
Steps
In a mixing bowl, add salt, sugar, light soy sauce, oyster sauce, cooking wine, chicken powder, cornstarch, and water. Give it a nice stir until it's an even consistency.
Time to prepare the rainbow!
Set the stove to high heat. Then, with a small mixing bowl or cup, mix cornstarch and water.
Once your wok is hot enough, add oil, and half of the ginger and garlic you prepared previously.
Before cooking the vegetables, add oil (less than we used for the chicken), and the remainder of the ginger and garlic into the wok.
After stirring the vegetables for about a minute or two, add cooking wine, sugar, salt, and oyster sauce into the wok. Continue stirring.
Add the chicken back into the wok, along with a bit of water to help generate some steam for the ingredients to cook.
The all-important step: pour the cornstarch mix (cornstarch & water) from earlier into the wok. This helps tie all of the flavors together, almost literally.
Winner winner, chicken dinner! It's done.
