Sesame Chicken

Ingredients

  • 3 oz red bell pepper
  • 1 small red chili pepper
  • 3 clove garlic
  • 3 small dried chili pepper
  • 1 oz white sesame seeds
  • 3 cups corn oil
  • 4 tbsp all-purpose flour
  • 3 tbsp cornstarch
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 6.5 tbsp water
  • 1 large egg
  • 1 tsp oil
  • 12 oz chicken breast
  • 1 tbsp cornstarch
  • 0.25 tsp salt
  • 1 tsp chicken bouillon powder
  • 1 tsp white pepper
  • 1 tbsp oyster sauce
  • 1 tbsp water
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 0.5 tsp dark soy sauce
  • 2 tbsp rice vinegar
  • 3 tbsp sugar
  • 3 tbsp water
  • 1 tsp oil
  • 1 tsp sesame oil
  • 1 tsp potato starch
  • 3 tbsp water
  • 4 cups water
  • 1 tsp oil
  • 1 tsp salt
  • 6 oz broccoli

Steps

  1. Slice off 1/5 of a large red bell pepper (use the remainder to make our other recipes, such as Sweet and Sour Pork or Rainbow Chicken Stir Fry!). Lay the pepper flat cut-side-down on the cutting board and with the shorter side facing your knife, slice into thin strips.

  2. In a medium bowl, mix together the all-purpose flour and cornstarch. Add the baking powder and salt and stir to combine.

  3. Cut the chicken breast into smaller pieces, approximately 1-inch thick by splitting it open horizontally. Next, cut these pieces in half, then into roughly 1-inch thick strips. Rotate, then cut into cubes.

  4. In a small bowl, combine the light soy sauce, oyster sauce, dark soy sauce, rice vinegar, sugar and water and mix thoroughly.

  5. Bring the water to a boil. Add the oil and salt.

  6. Heat up a wok to 200°F. Pour in the white sesame seeds and lower the heat. Stir around constantly using a spatula . After 30 seconds, turn off the heat and stir for another 30 seconds. Once the seeds are golden brown, transfer to a plate or bowl and set aside.

  7. Return the wok to the stovetop and heat on high. Add the corn oil to the wok and heat to 325°F.

  8. Add oil to the wok (you can reuse frying oil if you'd like) and heat on medium for 10 to 20 seconds.

  9. With the heat off, add the fried chicken, bell peppers, red chili pepper and mix well. Sprinkle in a bit of the sesame seeds and mix them in, then add some more on top, saving some for garnish.

  10. Transfer the sesame chicken to a large plate. Sprinkle the reserved toasted sesame seeds on top. Place broccoli on the side of the plate and serve!
