Ingredients
- 0.5 lb pork shoulder
- 0.5 oz green onion
- 0.5 oz shallot
- 3 clove garlic
- 3 oz cucumber
- 1 lb fresh egg noodle
- 1 teaspoon oil
- 2 tablespoon oil
- 1 teaspoon oil
- 1 teaspoon cooking wine
- 1 tablespoon white vinegar
- 1 teaspoon sugar
- 2 teaspoon sesame oil
- 1 tablespoon cornstarch
- 1 tablespoon oyster sauce
- 2 teaspoon light soy sauce
- 0.25 teaspoon white pepper
- 1 tablespoon water
- 3 tablespoon red vinegar
- 1 tablespoon white vinegar
- 1 tablespoon hoisin sauce
- 1 tablespoon ground bean sauce
- 2 tablespoon tomato sauce
- 2 tablespoon sugar
- 0.5 cup water
- 2 teaspoon potato starch
- 2 tablespoon water
Steps
Cut the pork shoulder into thin slices, then into strips.
To a small bowl, add the red vinegar, white vinegar, hoisin sauce, ground bean sauce, tomato sauce, sugar and water. Taste and adjust as needed.
Dice the green parts of green onion into small pieces.
Fill a wok or pot with water and bring to a boil water on high heat. Fill a large bowl with ice water and set aside.
Heat a clean wok on high. Once it starts to smoke, reduce the heat to medium and add the oil.
