Chow Mein, with Instant Noodles

Ingredients

  • 5 packs instant noodles
  • 2 ounce green onion
  • 2 ounce celery
  • 2 ounce white onion
  • 10 ounce bean sprouts
  • 1 teaspoon oyster sauce
  • 1.5 tablespoon light soy sauce
  • 2 teaspoon dark soy sauce
  • 1 teaspoon chicken bouillon
  • 1 teaspoon sugar
  • 2 tablespoon water
  • 1 tablespoon sesame oil

Steps

  1. Cut the green onions into about 1.5-inch-long batons. Separate the whites and the greens, as we’ll be cooking the whites first.

  2. Prepare the sauce by combining oyster sauce, light soy sauce, dark soy sauce, chicken bouillon, sugar, and water.

  3. Add the instant noodles to a pot of boiling water on high heat. Cook till the noodles just soften and separate, or about 45 seconds. Drain the noodles and transfer them to a bowl.

  4. Swap out the pot for a wok or a pan. Turn the heat to high. When the wok is hot, add 1 tbsp oil. Give the wok a quick swirl to coat it in oil.

  5. Bring the wok back up to temperature on high heat. Add 2 tbsp oil, and again, swirl to coat.

  6. Turn the heat down to the lowest setting. Stir the bowl of sauce to make sure it’s well-combined, pour it into the wok, mix everything around for 30 seconds until the sauce is evenly distributed.
