# Pad Mee Korat Recipe

## Ingredients

- 2 cloves garlic (minced)
- 3  shallots (finely chopped)
- ⅓ cup palm sugar
- 3 tbsp fish sauce
- 3 tbsp tamarind paste
- 2 tbsp soybean paste (Healthy Boy Brand preferred)
- ½ tsp dried chili flakes (adjust to taste)
- ½ tbsp black soy sauce
- 2 cups water
- 1½ cups pork belly (thinly sliced)
- 1½ cups bean sprouts
- 1 lb dry rice noodles
- 3  green onions (chopped into 2-inch pieces)

## Steps

1. Soak the rice noodles according to the package directions until flexible but still slightly firm. Drain well.
2. Heat a wok over medium heat and cook the pork belly until lightly browned and the fat has rendered. Transfer the pork to a plate, leaving the fat in the wok. If using another protein, heat 2 tablespoons of neutral oil instead.
3. Stir-fry the garlic and shallots until fragrant. Add the soybean paste, tamarind paste, fish sauce, palm sugar, black soy sauce, and dried chili flakes. Cook until the palm sugar has dissolved.
4. Pour in the water and bring to a gentle simmer. Add the soaked noodles and toss until evenly coated. Continue cooking until the noodles are tender and have absorbed most of the sauce.
5. Return the pork belly to the wok. Add the bean sprouts and green onions, then stir-fry for about 30 seconds. Serve immediately.
