
Braised Pork with Potatoes

- 1 lb pork belly
- 2 lb potato
- 3 oz red onion
- 3 oz carrot
- 3 clove garlic
- 3 stalk green onion
- 3 cup boiling water
- 3 tsp oil
- 1 tbsp ground bean sauce
- 1 tbsp oyster sauce
- 1 tbsp light soy sauce
- 2 tsp sugar
- 0.5 tsp salt
- 1 tsp sesame oil
Cách làm
Peel potatoes. Place the peeled potatoes in a bowl of cold water to prevent them from oxidizing and browning. Of course, if you prefer to eat the skin, you can leave the potatoes unpeeled and simply clean them thoroughly.
Place the pork in a bowl of cold water. Scrape the surface of the skin to remove debris and hair. To scrape, drag the blade of your knife sideways along the surface, dipping into the water to rinse.
Heat a wok on high. Add oil.
Add more oil and the pork. Let the pork cook undisturbed for 30-40 seconds so that the pieces can brown; then flip and brown the other side for 30-40 seconds.
Turn the heat to the lowest setting, or turn it off completely. Add ground bean sauce, oyster sauce, and light soy sauce. Briefly stir to distribute everything.
Add enough boiling water to almost fully cover all the ingredients; they don’t need to be swimming, but they need to braise in the boiling liquid.
